Sourdough Yeast Biscuits
Baking Time: 15 Minutes
Oven Temperature: 400 Degrees
Sponge:
1-cup buttermilk
1 tablespoon granulated sugar
1-cup sourdough starter
2-cups all purpose flour
Bread:
2 tablespoons butter or margarine
1 tablespoon granulated sugar
1 tablespoon baking powder
1-cup all-purpose flour
Mix sponge ingredients. Stir well, place in a nonmetal bowl, and cover with plastic wrap. Set aside until mix is bubbly, about 8-12 hours.
To make biscuits, melt butter and stir in sugar until well blended. Add all remaining ingredients to the sponge and need the dough for about 10 minutes until elastic or until it bounces back when poked. Let rise, in a warm spot until double in bulk Punch down dough; need lightly a few more times to get the rest of the air out. Pat out to 1/2 inch thick and cut out biscuits with a cutter. Place on a cookie sheet and let rise again until double in bulk. Place in a preheated oven for 15 minutes or until the top are golden brown.

Coffee Cake
Baking Time: 35 Minutes
Oven Temperature: 350 Degrees
1-cup granulated sugar
1-cup of butter or margarine
2-cups whole wheat or all-purpose flour
2 teaspoons baking powder
1/4-teaspoon nutmeg
1/4-teaspoon Cinnamon
1/2-teaspoon Salt
1/2-cup molasses
1/2-cup cold coffee
1/2-cup cream
3 eggs, beaten
1-cup raisins
Cream sugar and butter until light and fluffy. In a separate bowl, mix flour, baking powder, spices and salt. Add molasses, coffee, cream, and eggs; blend together. Slowly mix this until the butter a bit at a time and blend. Stir in raisins and bake in a well greased and floured 7-inch loaf pan. It is done when a inserted toothpick comes out dry.
Slice and butter for a morning treat….
